½ cup rolled oats
½ cup low fat cottage cheese
1/8 teaspoon baking powder
½ teaspoon pure vanilla extract
Cook the pancake mixture on a preheated, oiled (olive/coconut oil) pan (medium-low heat) until it bubbles. Flip and cook for another 30-60 seconds. Top the pancakes with fresh berries or sliced banana. Makes a great post work-out snack!
